Salisbury steak might be one of the most underrated comfort meals out there. It’s got that old school diner vibe, but tastes way better when you make it yourself at home. The beef patties are tender, the mushroom gravy is rich and savory, and when you pile it all on top of garlic mashed potatoes? That’s the kind of dinner that makes everyone come back for seconds.

This recipe came from my grandmother’s recipe box. She made it almost every week when I was growing up, and it was always the meal I requested for my birthday dinner. There’s something about that mushroom gravy that just takes me right back to her kitchen. I’ve tweaked it a little over the years, added more garlic to the potatoes, used better beef broth, but the bones of it are still hers.

My grandmother used to make this on Sunday nights, and the smell of those mushrooms cooking down in butter would fill the whole house. I still think about that kitchen every time I make this dish. There’s something about it that just feels like home.

This is the meal I turn to when I need something hearty and filling but don’t want to spend hours in the kitchen. It comes together pretty quick, the ingredients are simple, and it feeds a hungry family without any complaints.

Why You’ll Love This Recipe

This is comfort food at its finest, and there’s a lot to love about it.

  • Budget-friendly: Ground beef, mushrooms, and potatoes won’t break the bank.
  • One skillet for the main dish: Less cleanup means more time to actually enjoy your meal.
  • Kid approved: Even picky eaters tend to go for this one. The gravy helps.
  • Feels fancy but isn’t hard: You get that restaurant steak dinner vibe without the fuss.
  • Leftovers reheat well: This is great for meal prep or next-day lunches.

Ingredient Notes and Substitutions

You can tweak this recipe to fit what you’ve got on hand or what your family prefers. That’s one of the things we love most about it at my house.

  • Ground beef: Use 80/20 for the juiciest patties. Ground turkey works if you want something leaner, but add a splash of Worcestershire to boost the flavor. If you’re from a hunting family and have venison, you can use that, too.
  • Breadcrumbs: Regular or panko both work fine. Crushed crackers are a good swap, too.
  • Mushrooms: Baby bellas give you more depth than white button mushrooms, but either one is fine.
  • Beef broth: Low-sodium is better, so you can control the salt. Beef bone broth adds even more richness if you have it.
  • For a creamier gravy: Stir in a couple tablespoons of cream cheese or a splash of half and half at the end.
  • Cheese lovers: Top your patties with shredded cheddar or provolone right before serving.

Tips for Success

A few things that’ll help you nail this dish every time.

  • Don’t press down on the patties while they cook. You’ll squeeze out all the juices.
  • Let the mushrooms actually brown before stirring them too much. That caramelization adds flavor.
  • If your gravy gets too thick, just add a little more broth to thin it out.
  • Use a meat thermometer if you’re not sure about doneness. You’re looking for 160°F internal temp.

Storage and Reheating

Store any leftovers from this comfort meal in an airtight container in the fridge for up to 4 days. Reheat in a skillet over low to medium heat so the gravy doesn’t break. Add a splash of broth if it’s gotten too thick.

You can freeze this for up to 3 months. Let it cool completely, then store it in a freezer-safe container. Thaw overnight in the fridge before reheating in a skillet or in the oven at 350°F until warmed through.

Serving Suggestions

Garlic mashed potatoes are the obvious choice here, but this goes with a lot of different sides.

Sides like Italian green beans, roasted broccoli, or glazed carrots all work. A simple side salad helps cut through the richness. And honestly, some warm dinner rolls for soaking up extra gravy? Don’t skip those.

FAQs

Can I use a different type of meat?

Ground turkey or a beef and pork blend both work. Turkey will be leaner and a little less flavorful on its own, so you might want to add some extra seasonings. The gravy helps a lot either way.

How do I know when the gravy is thick enough?

Drag a spoon through it. If the gravy coats the back of the spoon and holds a line when you run your finger through it, you’re good. It’ll thicken a bit more as it cools, too.

What if I don’t have fresh mushrooms?

Canned mushrooms work in a pinch. Drain them well and add them to the butter. They won’t have quite the same texture, but the flavor will still be there.

Notes

It’s meals like these that memories are made from. Sitting around a table with family. Laughter and lots of love. And everyone leave full and satisfied.

  • 1 lb. Ground Beef 80/20 for juiciness
  • cup Breadcrumbs
  • 1 Large Egg
  • 1 small Onion finely diced
  • 1 tsp Salt & ½ tsp Black Pepper

For the Balsamic-Mushroom Gravy:

  • 8 oz. Sliced Mushrooms Cremini or White Button
  • 2 Tbsp Unsalted Butter
  • 2 Tbsp All-purpose Flour
  • 2 cups Beef Broth
  • 1 tsp Balsamic Vinegar adds a rich, dark acidity

For the Roasted Garlic Mash:

  • 1.5 lbs Gold Potatoes peeled and cubed
  • 4 cloves Garlic roasted and smashed (provides a sweeter, deeper flavor than raw garlic)
  • ¼ cup Milk or Heavy Cream
  • 2 Tbsp Butter

Instructions

  • Boil the potatoes until tender. Drain and mash with the roasted garlic, butter, and milk until silky. Cover and keep warm.
  • In a large bowl, combine the ground beef, diced onion, egg, breadcrumbs, salt, and pepper. Knead gently until just combined. Shape the mixture into four even, oval-shaped patties.
  • Heat oil in a large skillet over medium-high heat. Sear the patties until they have a dark, caramelized crust on both sides. Remove from the pan and set aside.
  • In the same skillet, melt the butter. Add the sliced mushrooms and sauté until they are tender and golden.
  • Stir the flour into the mushrooms and cook for 1 minute. Gradually whisk in the beef broth and the balsamic vinegar. Simmer until the gravy begins to thicken and coat the back of a spoon.
  • Return the steaks to the skillet. Reduce heat to medium-low and simmer for 5–10 minutes, allowing the meat to finish cooking and soak up the savory gravy.
  • Place a generous scoop of the roasted garlic mashed potatoes on a plate, top with a steak, and ladle plenty of the balsamic-mushroom gravy over the top.
