  • 4 Bone-in or boneless pork chops roughly 1-inch thick
  • ½ cup All-purpose flour for dredging

  • 1 tsp. Paprika
  • 3 tbsp. Unsalted butter
  • 1 tbsp. Olive oil
  • 1 Large yellow onion thinly sliced
  • 8 oz. Mushrooms sliced
  • 1 clove Garlic finely chopped
  • 1 ½ cups Low-sodium chicken broth
  • ¾ cup Heavy cream
  • 1 tbsp. Worcestershire sauce
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Use paper towels to thoroughly pat the pork chops completely dry on all sides to maximize searing efficiency. In a shallow bowl, whisk together the all-purpose flour, garlic powder, onion powder, paprika, salt, and black pepper until fully unified.
  • Dredge each pork chop through the seasoned flour mixture, pressing firmly so the starch adheres smoothly across the entire surface, then gently shake off any loose powder. Reserve exactly 2 tablespoons of this seasoned flour mixture in a small cup to use later as your gravy thickener.
  • Add the olive oil and 1 tablespoon of the unsalted butter to a large cast-iron skillet set over medium-high heat.
