This tater tot casserole is a ground beef bake that will get everyone running to the kitchen to see what’s in the oven. Seasoned meat, melted cheddar, and crispy tater tots that get golden on top while everything underneath turns creamy and savory.

My aunt first made this cowboy casserole. Her version didn’t have the sour cream, but I started adding it a few years ago, and it made everything creamier. She’d probably give me a hard time about changing her recipe, but she’d be happy I’m remembering her and giving her credit!

My mom used to throw something like this together on Friday nights when nobody felt like doing anything fancy. We’d crowd around the table and there were never leftovers.

Corn and beans mixed in with the beef give it that cowboy casserole feel. It’s a hearty dinner without you having to stand over the stove all evening.

What I love most is how kid friendly it is. My nephew who won’t eat anything green will demolish a plate of this and ask for seconds.

If you’re feeding a crowd or just need a solid ground beef bake for the week, this tater tot casserole pulls its weight. Budget-friendly, reheats like a dream, and you can prep it ahead.

Why You’ll Love This Recipe

This cowboy casserole checks all the boxes for a meal you’ll actually want to make again.

  • Dead simple ingredient list: You probably have most of what you need in your kitchen already.
  • Total crowd pleaser: Kid friendly and grown-ups go back for seconds too.
  • Weeknight fast: About 15 minutes of hands-on time before the oven does the rest.
  • Stretches your grocery budget: Ground beef, frozen tater tots, and a can of soup go a long way.
  • Great for meal prep: Make it Sunday and eat off it for days, or freeze portions for later.

Ingredient Notes and Substitutions

You’ve got plenty of room to make this tater tot casserole your own.

  • Ground beef: Ground turkey works if you want something leaner. Ground sausage adds more flavor. Even ground chicken will do.
  • Cream of onion soup: Can’t find it? Cream of chicken or cream of mushroom will work just fine.
  • Cheddar cheese: Sharp cheddar gives you the best flavor, but pepper jack or colby jack are fun if you want to mix it up.
  • Sour cream: Light sour cream or plain Greek yogurt both do the same thing here. You won’t be able to tell the difference once it’s baked.
  • Corn: This gives the casserole that classic corn and beans cowboy feel. You can also stir in a drained can of pinto beans for extra fiber and to make it even more filling.
  • Extra veggies: Mushrooms, peas, diced bell pepper, or celery all work. Toss in whatever you have that needs using up.

Tips for Success

A few things that’ll make sure your tater tot casserole comes out perfect every time.

  • Drain your meat well: Extra grease will make the whole thing soggy. Take that extra minute.
  • Don’t skip greasing the dish: Tater tots on the bottom will cement themselves to an ungreased pan.
  • Shred your own cheese: Pre-shredded cheese has a coating on it that keeps it from melting smooth. Block cheese melts way better.
  • Let it rest before you cut into it: Give it about 10 minutes after it comes out the oven. Everything sets up and you’ll get cleaner servings.
  • Check the tots on top: If the cheese is done but the tots aren’t crispy yet, tent some foil over it and give it another 5 to 10 minutes.

Storage and Reheating

Let the casserole cool down to room temperature before you put it away. Store leftovers in an airtight container in the fridge for up to 4 days. To reheat from the fridge, pop individual servings in the microwave for 1 to 2 minutes, or put the whole thing back in the oven at 350 degrees covered with foil for about 10 to 15 minutes.

You can freeze this hearty dinner for up to 4 months. Just make sure it’s cooled completely and stored in a freezer safe, airtight container. When you’re ready to eat it, thaw it overnight in the fridge and then reheat in the oven at 350 covered with foil until it’s warmed all the way through.

Serving Suggestions

Pull this tater tot casserole out the oven and serve it hot with some chopped green onions or fresh parsley scattered on top.

For a side dish, make this heart dinner even more sturdy with beans and ham. And nobody ever said no to some Mexican cornbread!

If you like a little heat, drizzle some hot sauce or salsa over your serving. My brother-in-law puts pickled jalapenos on his and swears by it.

FAQs

Can I assemble this cowboy casserole ahead of time?

You can put the whole thing together the night before and keep it covered in the fridge. Just bake it straight from the fridge and add an extra 5 to 10 minutes since it’ll be cold going in.

What size baking dish do I need?

A standard 9×13 inch dish is what you want. Anything smaller and it’ll overflow. For a half batch, an 8×8 dish works.

Can I add corn and beans to this?

A can of drained pinto beans or black beans goes really well in this ground beef bake. Just stir them into the meat mixture along with the corn. It makes the casserole more filling and adds extra nutrients.

Notes

I make this tater tot casserole quite a bit because kids always love it. When my kids surprise me by bringing friends home with this, I can make this cowboy casserole and feed a big group of them.

Prep Time 15 minutes
Cook Time 40 minutes
Course Main
Cuisine American

Ingredients

  • 2 lbs. Ground beef
  • 1 Large bag frozen tater tots divided
  • 1 cup Onion chopped
  • 2 tsp. Minced garlic
  • ½ cup Milk
  • 1 Can cream of onion soup
  • 1 Can of corn drained
  • ¼ cup Sour cream
  • 2 cups Shredded cheddar cheese divided
  • Salt and black pepper to taste

Instructions

  • Preheat your oven to 350°F and grease a 9×13-inch baking dish.
  • Arrange exactly half of the frozen tater tots in a single, tightly packed layer across the bottom of the prepared dish. Pop the dish into the preheating oven for 10 minutes while you prep the meat. Pro Tip: Par-baking the frozen bottom potato layer flash-sears the starches. This forms a crisp moisture barrier that stops the heavy meat juices from turning the foundation into a mushy, waterlogged layer.
  • Add the ground beef and chopped onion to a large skillet over medium-high heat. Sauté for 6–8 minutes, breaking the beef into fine, even crumbles, until the meat is entirely browned and the onions are soft. Drain away all excess pooled grease completely.
  • Reduce the skillet heat to low. Toss in the minced garlic and sauté for exactly 30 seconds just until fragrant. Turn off the stove burner and slide the skillet off the heat entirely.
  • Pour the cream of onion soup, milk, sour cream, drained corn, and exactly 1 cup of the shredded cheddar cheese directly into the warm beef skillet. Whisk the mixture vigorously off-heat until the cheese melts from the residual warmth. Crucial: Incorporating sour cream and condensed soups into slightly cooled meat off direct heat stabilizes the dairy fats, ensuring your beef gravy bakes into a smooth, velvety sauce instead of splitting into a curdled, watery layer.
  • Season the unified beef gravy with salt and black pepper to taste. Remove the baking dish from the oven and spread the hot meat mixture evenly over the par-baked tater tot base.
  • Arrange the remaining half of the frozen tater tots in a neat, uniform pattern over the top of the meat layer. Blanket the potato grids with the final cup of shredded cheddar cheese. Bake uncovered for 30 to 40 minutes until the top tots are deep golden brown and the cheese is bubbling intensely at the perimeter. Let it cool for 5 minutes before scooping.
